Make this quick and easy Trader Joe’s recipe! Sweet Corn Ravioli is tossed in garlic butter, fresh basil, lemon, toasted pine nuts and topped with grated parmesan cheese. This is the best summer pasta that is restaurant quality without the price tag.
Over medium-low heat, toast pine nuts in a dry skillet until golden; set aside.
In the same skillet, melt butter. Add garlic and cook 1–2 minutes until fragrant and the garlic is soft.
Cook ravioli according to package directions in salted water. It cooks very quick!
Add cooked ravioli, lemon juice, pine nuts, and basil to the skillet with about 1/4 cup of the pasta water you cooked the ravioli in. Toss very gently to coat.
Top with freshly grated parmesan cheese before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 2 days.
Swap pine nuts for walnuts or almonds if that’s what you have.
