Ingredients

medium red onion, thinly sliced

apple cider vinegar (enough to cover onions)
*or any kind of vinegar you have on hand.

salt (just a pinch)
Instructions
Thinly slice the red onion and place into a mason jar.
Pour apple cider vinegar over onions until fully covered.
Add a pinch of salt and optional honey. Stir or shake.
Let sit at room temperature for 10–15 minutes before serving.
Notes
Store in an airtight jar in the fridge for up to 1 week.
Flavor gets stronger the longer they sit.
Optional: 1 tsp honey or hot honey
