Ingredients  

  • 2 packages Trader Joe’s Sweet Corn, Burrata & Basil Ravioli
  • 3 tbsp Butter
  • 3 cloves garlic, chopped (or 1–2 tbsp jarred garlic)
  • 1 tbsp lemon juice (fresh or bottled)
  • 4 tbsp Fresh Basil, torn or chopped
  • 1/4 cup Pine Nuts
  • Grated Parmesan Cheese

Instructions 

  • Over medium-low heat, toast pine nuts in a dry skillet until golden; set aside.
  • In the same skillet, melt butter. Add garlic and cook 1–2 minutes until fragrant and the garlic is soft.
  • Cook ravioli according to package directions in salted water. It cooks very quick!
  • Add cooked ravioli, lemon juice, pine nuts, and basil to the skillet with about 1/4 cup of the pasta water you cooked the ravioli in. Toss very gently to coat.
  • Top with freshly grated parmesan cheese before serving.

Notes

  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Swap pine nuts for walnuts or almonds if that’s what you have.
  • The recipe is just as delicious with only the pasta, garlic, and butter. Use what you have!
